1 cup finely chopped baby carrots
1 cup finely chopped green beans
1 cup finely chopped sweet potatoes
1 tablespoon chopped ginger
2 tablespoons olive oil
1/2 cup white rice
4 cups water
2 sodium free chicken bouillon cubes
1 can salt free chicken
Start by sautéing all the vegetables in olive oil for 5 minutes. Add water, ginger and bouillon cubes and rice and bring to boil. Let simmer for 30 minutes. Cool down and add the can of chicken and serve.
